Freda is a follower of Christ, wife, gluten-free cook, author, and Chemical Engineer major - she knows what she is talking about! Her cookbook has really hit the delicate balance of honoring God with health and cooking while making it accessible to us, the readers and cookers! Freda’s heart and writing are so dynamic - unlike a cookbook I’ve ever owned. She walks you through the messiness and joys of a marriage in health crisis, shares her personal story as well as uses health to point us back to Christ. Her recipes are so relevant as they provide high nutrition, low-budget, gluten-free options for your meals. “God was using the difficulties of our marriage to show me areas of my life that still needed improvement.” Amen! God uses struggles, specifically health difficulties, to draw us near to Himself. Freda in her opening chapter promises that this is not just another white noise book in the gluten-free world but rather a source of “encouragement to others, especially a wife or mother who is on the brink of despair as she desperately tries to find food that won’t make her loved one sick.” I could go on about Freda personally but I should get to her recipes. Each is nutritious, vibrant with flavors, carefully planned, and an accessible approach to healthy cooking. In our home we are extreme fans of the Meatless Minestrone, rich with vegetables and flavor for a winter evening. And the moist, sweet Pumpkin Bread received two thumbs up from my family. All recipes are simple to follow and have a wonderful space for personal recipe notes.
